The combination of perfectly cooked poblanos and veggies, and a creamy homemade poblano crema creates a flavor explosion that will leave you wanting more. The crema has a smooth and creamy texture that provides the perfect complement to the bold flavors of the tacos themselves. Hereโs how I make Poblano Tacos with Poblano Crema (this makes 6 tacos): 1. Wash and cut 2 poblanos in half. Remove the stem and seeds. Place on a baking sheet and broil for 3-5 minutes on each side (broiling is quicker and my preferred method, but you can also air fry or roast them) 2. Put the cooked poblanos in a bowl and cover with plastic wrap. Let sit for 10-15 mins. Then peel the skin 3. Cut 1 poblano in strips and set the other one aside 4. In a pan, cook 1/2 medium onion, poblano strips, and 1 cup corn. Keep the spices simple with salt, pepper, and a little bit of chili powder 5. With the 2nd poblano, make a poblano crema by blending 1 cooked poblano, 1 garlic clove, 1 small chili pepper, 1 tbsp milk, 1/4 cup mayo, salt, and pepper. Add water to thin it down if needed 6. Assemble the tacos! Warm up the tortillas and add a protein of your choice. Top with the veggies and crema P.S. the crema by itself is so good that I had to stop myself from finishing it with a spoon. The crema would be great on other dishes or even with grilled corn!
