@morgan Dinner sorted with homemade version of this takeaway classic, Beef & Black Bean 😋 - Homemade Beef & Black Bean Serves 3 For the marinade: 450 grams scotch fillet steak (thinly sliced against the grain) 1 teaspoon baking soda 60 ml water 2 teaspoons corn flour 2 teaspoons vegetable oil 2 teaspoons oyster sauce 1 teaspoon Shaoxing wine For the stir fry: 30 ml vegetable oil 1/2 brown onion, finely diced 2 cloves garlic, minced 1 red capsicum, cut into cubes 100 ml chicken stock 100g black bean and garlic sauce (such as Lee Kum Kee) 3 tbsp oyster sauce 2 tsp soy sauce 1 tsp Shaoxing wine 85 grams snow peas (trimmed) 1 bunch Chinese broccoli, cut into strips (optional) 2tsp corn flour mixed into a slurry with 2 tablespoons water Salt and white pepper to taste Steamed rice, to serve Begin by preparing the marinade. In a bowl, combine the baking soda, water, corn flour, vegetable oil, oyster sauce, and Shaoxing wine. Mix well until fully combined. Add the thinly sliced scotch fillet steak to the marinade, ensuring every piece is fully coated. Allow the steak to marinate for at least 30 minutes. After the steak has marinated, heat half of the vegetable oil listed for the stir fry in a large wok or frying pan over high heat. In batches, flash fry the steak until it is browned. Be careful not to overcrowd the pan. Remove the steak from the pan and set aside. In the same pan, add the remaining vegetable oil. Fry the finely diced brown onion and minced garlic until they are soft and fragrant. Next, add the cubed red capsicum to the pan, continuing to stir fry until the capsicum is also soft. Stir in the chicken stock, black bean and garlic sauce, oyster sauce, soy sauce, and Shaoxing wine. Allow these ingredients to combine and cook for about a minute. Add the trimmed snow peas and strips of Chinese broccoli (if using) to the pan. Stir fry these until they are well coated with the sauce and heated through. Mix the corn flour with water to form a slurry and add it to the pan. This will help to thicken the sauce. Season with salt and white pepper to taste. Finally, return the browned steak to the pan, stir frying briefly to combine everything together. Serve up with the steamed rice and enjoy.
